Ingredients:

  • 1 large banana
  • 1 egg

  • 20g oats

  • 50g peanut butter
  • 3 tbsp date syrup
  • 2 tbsp coconut oil
  • Handful of raspberries
  • Handful of cacao nibs

Instructions:

  1. Mash the Banana: Start by mashing the large banana in a bowl until smooth. This will be the base of your pancake batter.
  2. Add the Egg: Crack in the egg and whisk it together with the mashed banana until fully combined.
  3. Mix in Daily Shake Discoff: Add a sachet of Daily Shake Discoff to the mixture, along with 20g of oats and 50ml of almond milk. Stir until the batter is well combined.
  4. Cook the Pancakes: Heat 1 tbsp of coconut oil in a frying pan over medium heat. Pour the pancake batter into the pan and cook for a couple of minutes on each side, flipping when golden brown.
  5. Make the Peanut Butter Drizzle: In the same frying pan, add 1 tbsp of coconut oil, 50g of peanut butter, and 3 tbsp of date syrup. Gently heat on low, stirring until the drizzle is smooth and glossy.
  6. Assemble the Pancakes: Stack the pancakes on a serving plate and pour the peanut butter drizzle over the top. Finish off with a sprinkle of fresh raspberries and cacao nibs for added crunch and sweetness.
